Stewed Tomato Recipe for canning or Freezing

Stewed Tomato Recipe >< This is a Old Family Recipe form years back

4 qt. or peeled & chopped tomatoes
1 1/2 cups of chopped celery (optional)
2 cups chopped onion
6 cloves garlic  (Optional )
1 cup chopped bell pepper
1 Tbs. dried Basil (optional)
1 Tbs. dried Oregano ( optional)
2 bay leaves
1 1/2 Tbs. salt

combine all ingredients in a large pot ( we use a 8 qt. stainless steel pot ) Bring to a boil & reduce to simmer, uncovered for 1 hr. stirring occasionally, Remove bay leaves

Spoon hot mixture into hot sterilized jars, leaving 1/2 in. of head space, cover with metal lids and screw on bands hand tight, ( Not Tight) Processing in pressure canner at 10# pressure for 15 min.>< it doing Qt. Pressure at 10# pressure for 20 Min. ( we can most of ours in pts.

Yield will be about 5 qt. or 10 pt. >< May also be spooned into freezer containers and froze instead of canning

This can used as a base for making spaghetti, chill, veg. soup, tomato sauce for meat, chicken, fish, shrimp creole, ect.

Ps: we use it also for making tomato gravy>< I have also been Known to take a pt. of this Chilled, run through the Blinder, then Dr. it up some >< Bloody Marry >< Pulp & ALL >< Put the right stuff in the Mix ><Good

NOTE: we use all the Optional except the Garlic >< we add the garlic if wanted when cooking

we also have a big stainless steel pan, that covers 2 burners on the stove, its the type use on steam tables >< many times we do a double recipe, we have 2 pressure canners

When I say peeled >< we score the tomato them put them in hot water, then in ice water, the skin comes off so easy, we core the tomatoes before we do the skinning part
