How to cook Cocuzza???

Anyone have a recipe? I looked online and most were those I Tallion dishes or stew. I have to put some Cajun in it, Ya know.

Can I blanch and freeze some?

I did find one I'm gonna try tomorrow but I'm adding shrimp and maybe some type of noddles with more of a cheese sauce/gravy.

i peeled mine (i am not sure on yours, but the skin was much denser than peeling a zuke and seemed a bit more waxy) cut mine in half, scooped out the seeds and diced it up.  i sauteed it with some salt/pepper and some of the chopped candy onion from the freezer.  i sauteed it until it had that translucent sort of look and ate it that way.

i had some left over and mixed it in with some of my left over homemade mac and cheese. 

it kept its firmness pretty well and i would think you could stuff it like a zucchini or squash and it would be fine.

When I grew them our favorite recipe was the same as preparing egg plant parmesan. I suppose you could sprinkle some kind of Cajun spice on it I never thought of doing that.
