SUPER BOWL APPETIZER..... Ideas
« on: February 04, 2018, 08:57:22 AM »
Here a a few that I have made in the past that are easy and in general have all of these ingredients on hand.

Please share your ideas I am always in search of something new to try.

Pesto Twists

defrost the puff pastry
roll out the sheets on a lightly floured surface to about 12 inches wide.
Brush one sheet all over with pesto
top with the remaining sheet of pastry.
Cut into 12 equal strips, then twist each strip and place on a parchment paper lined baking sheet.
Bake at 400 degrees for about 15 minutes, until golden brown.

Cheesy Biscuit Bites

Canned Biscuits
Mozzarella Cheese

Separate into 16 pieces and flatten each biscuit be big enough so you can stuff a mozzarella ball into the middle and fully encase it with dough.
Seal up the edges around the cheese, and place on a baking sheet.
Brush lightly with olive oil, sprinkle with salt and pepper

Bake at 375 degrees for about 15 minutes or until golden brown.

Pigs in a Blanket

cocktail wieners
Crescent rolls

Cut the rolls in half
wrap the wieners with the dough.
Place on a baking sheet

Bake at 375 degrees until golden brown, about 13 minutes.

Bacon-wrapped Shrimp

Wrap large shrimp with half slices of bacon.
Place on a baking sheet topped with a wire rack
Bake at 450 degrees for 10-15 minutes or until shrimp is cooked through and bacon is crisp.

Prosciutto and Figs

Wrap fresh fig halves in prosciutto
Drizzle with olive oil
Sprinkle with salt and pepper,
Bake at 400 degrees for about 5 minutes.

Roasted Chickpeas

Drain and dried the chickpeas The less moisture the better
On a baking sheet, toss with plenty of olive oil and season with salt. I also sprinkle with some Cayenne or  Chipotle  powder.
Bake at 400 degrees for at least 25 minutes, tossing halfway through, until crisp and starting to brown.

I understand and am very disappointed with the NFL stance or knee as it were.
I also will NOT buy any products advertised at today game this year either.

Hit them in the wallet is how I deal with it!

I suppose I could of titled the thread  "Appetizers" so as not to offend but this is how I had them listed in my cookbook.

We take large gulf shrimp and split them, add a strip of fresh jalapeño, Monterrey jack cheese and wrap them with the thinnest bacon you can find. We grill them over low heat. The shrimp will dry out long before thick bacon cooks.

I also take boneless skinless chicken breast and filet them to approximately 3/8" thick. Place it between layers of Saran Wrap and pond the whack out of them with a tenderizing hammer. I place them in a bowl with raspberry chipotle sauce for some sweet heat. The do the same as the shrimp above. Folks eat them as fast as you can get them off the grill.

We have some fresh redfish from our neighbors next door and grill the filets skin side down. Crumble the fish and place it on hot tortillas. We mix mayonnaise and siracha sauce to top with and then add shredded cabbage to have fish tacos.

My wife also makes what we call roll ups. She takes the large spinach and red tortillas (I can't remember what flavor they are ::)) and spreads chives and onion cream cheese ham or any other lunch meat and then rolls them up and slices them an inch thick. There are never any of them left either.

I made a few wings yesterday, all where smoked or cooked on the pit except the Buffalo wings. They were fried.

Lets start with the sauces, from left to right.
#1 is a BBQ sauce mixed 50/50 using Sweet Baby Ray's and Jack Millers cooked down a little to thicken it up.
#2 is the traditional Ranch Dressing and Blue cheese with dried parsley and minced garlic. I can't NOT have the original.
#3 is Sticky wing sauce with Honey, Sriracha, Hoisin, lime juice, soy sauce, hot sesame seed oil and sesame seeds.
#4 is a mix of a few Asian dipping sauces, I used soy, hoisin, lime, rice vinegar, honey, scallions, green onions, cilantro, peppers

The wings are Buffalo style, fried and steamed while hot with Franks and Sriracha, Bourbon Honey Bacon wings, nothing special but what I listed, Sticky wings with Honey, Sriracha with sesame seeds, these were marinated with dry rub, cooked on the pit and glazed with the sauce till they were a sticky mess,  Soy and Asian pepper paste sauce to glaze topped with green onions, hot and smokey flavor that taste great with that Thai sauce And finally Dry Rubbed BBQ wings. Spritzed with apple juice to stay moist before the last coating of Rub
