I have a local restaurant owner that tasted one of my candy onions, and went crazy. He wants to buy from me this season. My problem is I have never sold them to anyone. Only put them in the CSA baskets for my customers who had paid for the whole basket. So how do I sell them by the lb. or individually? the green ones will wg more because they are green and still growing, the dry ones will be bigger so therefore they may wg more than the green ones. So what are some of your suggestions on how to price them to him?  I will begin to pull them when they start getting about 2  to three inches in diameter BTW.

You can find out what the national average price for retail and wholesale by looking on the USDA website that has a daily price. Just look under onions and potatoes.

It will only give you dry onions but its a starting point. I use this site to help me price all my produce. It sorts by area, organic and non organic.
