Sheep back from the processor

We picked up the meat from a sheep we took in last week for processing. The customer in this case is a one person household and he wanted the maximum number of steaks, roasts and stew meat. Rather than Leg of Lamb we had them cut everything into steaks. The shoulder turned into some pretty roasts and we even wound up with several steaks from the neck which we haven't done before. He originally ordered this ram almost a year ago and asked that it be left intact to get as much growth as possible.  We are getting more repeat customers since we push the idea of letting the sheep get to a mature weight and you get more bang for the buck.  We take a deposit on the lamb and they then pay market (wholesale) price when I take it to the butcher for them.
